Paan Ice Cream

Paan ice cream recipe with video recipe - I was introduced to Paan ice cream for the first time in the restaurant Absolute Bbq. It was so delicious that I wanted to give it a try at home. Creamy delicious ice cream with a flavor of meetha paan, A complete digestive dessert. It is a very very easy to do dessert. Make them, do serve a scoop and surprise your wife :) She will hug you with another 100 scoops of love ;) The recipe uses a special rose petal jam called gulkand which you get in all dabba chetty shops, i.e herbs shop and supermarkets. In case you do not get them in hand, you can substitute with a paste of fresh petals + sugar + honey. Cooking Time : 30 mins   Serves  : 6 scoops    Freezing Time : 7 hours


Ingredients

Milk 1/2 litre  + 3 tbs for mixing with corn flour
Sugar- 4 to 5 tbsp
1 1/2 tbsp corn flour
5 beetle leaves
1 1/2 tbs gulkand
1 tbsp sweet fennel
Rose essence 1 drop
2 tbsp fresh cream
1 tbsp chopped nuts(badam or pista or cashews)
1 tbsp seedless chopped dates
1/4 tsp elachi powder
1 tbsp tutti fruity

Method

1.    In a pan boil the milk, Once it is boiled switch to medium flame and add sugar. Whisk till sugar melts.
2.    Add 1 drop rose essence to the boiled milk.
3.    In a separate small bowl add 3 tbs cool milk and corn flour. Mix till it dissolves completely without forming lumps
4.    Switch off the boiling milk stove and add corn flour milk mixture to it.
5.    keep whisking continuously as the mixture will start thickening.
6.    Transfer to a bowl and let it cool completely.
7.    In the meantime, lets prepare the meetha paan.
8.    Remove the stem of 5 betel leaves and cut randomly
9.    In a mixie jar, add the betel leaves along with gulkand and sweet sombu. Make them into a nice paste.
10.    Back to the milk part now. To the cooled milk mixture, add fresh cream.
11.    Beat the mixture for a minute with an electric beater.
12.    Add the ground paan mixture with 1 tbsp chopped nuts(badam or pista or cashews), 1 tbsp seedless chopped dates, 1/4 tsp elachi powder and 1 tbsp tutti fruity
13.    Transfer this mixture to an airtight container and cover with cling film and close the lid.
14.    Freeze the ice cream overnight for best results.


Note

1. The mixture tends to form ice crystals when frozen so remove the bowl after an hour of freezing and beat with the beater for a minute and freeze it again. Repeat this step for atleast 3 times, 3 hours once. This will ensure you have a smoother icecream.
2. If your freezer is good, it will freeze soon, may be in 6 to 7 hours.
3. You can add a drop of green color ( permitted food colors ) if you want more of greenish shade.
4. You can substitute half of the milk with fresh cream for more creamier version.
