Being a biriyani lover, I have tried out several versions of ennai kathirikai and finally this one is my go-to version anytime. I am sorry to those readers whom I made wait ( atleast a year ? ;) ) for the perfect ennai kathirikai recipe. This version will give you a thick silky coconut sesame based masala with brinjal slices fried in oil. However if you would like to make it watery, reduce the amount of coconut. Having been busy with the new food styling and photography project, there is very less time for blog and cooking. East or west, there is no joy that can match the joy working for your own blog :)

Ennai Kathirikai for Biriyani


Preparation time : 10 mins    |       Cooking time :  30 mins        |         Serves : 2-3




6 Brinjals


1 Big onion


1 hybrid tomato chopped


1/4 tspn red chilly powder


1/2 tspn coriander powder


1/4 tspn turmeric powder


1/2 tspn pepper


few curryleaves


1/2 tspn ginger garlic paste


3 tspns of tamarind juice






1/4 tspn jaggery


5 tbspns gingelly oil


To grind to a paste


1 slice of coconut


1/4 tspn sesame


Less than 1/4 tspn fennel or saunf


1/4 tspn khus khus


4 long red chillies






Step 1 - Clean the brinjals, slit them into 4. Check for worms. If yes, discard them.

Step 2- Grind ingredients for masala paste smooth, adding water little by little.

Step 3 - Heat oil in a wok. Add pepper and curryleaves. Wait until all the peppercorns splutter. keep the pan on a medium flame.

Step 4 - Add chopped onion and saute until nice golden color. Add the ginger garlic paste and saute on medium flame for a minute.

 Step 5 - Reduce flame to low. Add all the spice powders - coriander, red chilly and turmeric powder.

Step 6 - Add the brinjals and keep stirring on a medium to high flame for the next 2 minutes which will roast the brinjals well. Add the chopped tomato, salt. Cover and cook for next 5 minutes.

Step 7 - Add the tamarind juice, let it boil on a medium flame. Check seasoning and add salt if required.

Step 8 - Add the ground masala paste and cover the pan. Let the masala cook in a low flame for the next 5 minutes. Add jaggery at the end and switch off the flame.
