Cream of Broccoli soup step by step recipe with pictures - Perfect soup for the Chennai weather now. The pouring has become little normal and as I stepped into the supermarket after a long gap, those fresh broccoli caught my attention. Yes I soup-ed them and bot it for you :D Have it, take a sip slowly and enjoy the warmth as it slides through inside. One of the true pleasures to enjoy in this season. Cream of Broccoli Soup


Cooking time : 30 mins              |                 Serves 2 adults




5 shallots or 1 big onion chopped


butter 1 tbspn


Cream 1 tbspn


A floret of broccoli








1 tbspn All purpose flour


Oregano seasoning


2 cups Chicken stock or veg stock






Step 1 - Heat a pan with 1 tbspn of butter and saute the onions in the butter until they become translucent.




Step 2 - Add all purpose flour or maida and roast the flour until it turns light golden in colour.




Step 3 - Add the chicken or veg stock and keep whisking so that no lumps are formed. Let it boil in medium flame for a 10 minutes.




Step 4 - Add the broccoli floret chopped and let it boil in medium flame for 15 minutes. They would turn mushy almost.




Step 5 - Add seasoning - pepper, salt, oregano as per your taste. Simmer the soup for 10 minutes. Switch off flame.




Step 6 - Use a blender to blend or grind all the ingredients into soupy form.




Step 7 - Serve the soup hot topping it with a spoon of cream. Simple, isn't it :) 





    1. Do not waste the broccoli stem. Peel the stem. Roughly fine chop them and add them to the stock along with the florets. Fine chopping helps it cook easier.


    1. If you want it to be really creamy (as per its name) , you can add a few tbspns of cream at the end after blending.


    1. If you do not have a hand blender, transfer the soup to a mixie when cool and grind it. Transfer back to the pan and simmer it.
