with step by step pictures - Coorgi pork is something I loved having all 3 meals a day during our stay in coorg. Pigs are grown in their own farm, well maintained. And we had fresh pork roast or curry kind with every meal. Bites of this succulent juicy flesh with every meal was heaven in mouth for sure. Pork haters, please excuse cookie eve ;) I right away wanted to get the recipe. And the hosts namrata and vikas were kind enough to arrange for a shoot at their kitchen and yeah here it is the most delicious and on demand coorgi pork curry recipe :)

Coorgi Pork Curry

 

Cooking time - Approx 35 mins     |     Serves 4 to 5

 

Ingredients

 

2 Big Onions 

 

1 kg pork with fat and skin

 

3 Big Green chillies

 

1 full Garlic

 

1 finger size ginger 

 

2 tspn jeera seeds

 

2 tspn coriander powder

 

1.5 tspn red chilly powder

 

1 tspn turmeric powder

 

rock salt

 

1 tspn pepper powder

 

1 to 2 tspn of kachampuli

 

Curry leaves

 

Coriander

 

1.5 tspn pork garam masala powder ( Storebought or recipe mentioned below )

To be dry roasted one by one and powdered. 




    • 2 tablespoon coriander seeds

 

    • 1 inch cinnamon

 

    • 5-6 cloves

 

    • 10-15 peppercorns

 

    • 1-1/2 tablespoon cumin seeds

 

    • 1 teaspoon mustard seeds

 

    • 5 methi/fenugreek seeds 



Method

Step 1 - Collect all the ingredients

Step 2 - Clean the pork well and keep it ready.

Step 3 - Marinate pork with red chilly powder, turmeric powder and little salt.

Step 4 - Grind onions, green chillies, ginger, garlic, jeera seeds into a coarse paste.

Step 5 - Dry roast the coarse paste in a non stick kadai for 2 minutes in medium flame.

Step 6 - Add marinated pork to the paste, mix well and saute in high heat for 2 mins.

Step 7 - Add pepper powder, coriander powder. Mix well. Cover and cook for another ten minutes in slow flame. Slow cooking is the key to get the delicious taste.

Step 8 - Add curry leaves and chopped coriander leaves. There must be some juices oozing out of the pork now.

Step 9 - Add required amount of water as per the consistency you desire for. I advise not more than 3/4th cup of water. Pork when cooked in its own fat and juice gives the awesome flavor. Cover the pan and cook in slow flame until the meat is fully cooked. Check salt at this stage and add if necessary

Step 10 - Once fully cooked, add pork garam masala powder and kachampuli. Mix well.

Step 11 - Cook in medium to high flame for another 4 to 5 minutes.Switch off and serve hot with roti or rice :)
